It's low carb, and doesn't have any of that nasty oil caked all over the fries either. This makes the perfect afternoon snack or super bowl event snack! Trust me, you will be addicted after you try these tasty Air Fryer Zucchini Fries!

I've always been searching for a healthy recipe that I can make that fits into my health and fitness goals. It's easy for me to get off track during the holidays especially, and when I want a snack that seems like it's not healthy. Although, I really try super hard to stay on track, sometimes I need something that doesn't feel like I'm eating healthy all the time. So, I ran into Pampered Chef's delicious version of Zucchini Fries, which I will share today.
Zucchini is one of my favorite summer vegetables. It’s cheap, versatile, and totally delicious.
These Zucchini Fries are the perfect combination of light, crispy and seasoned with Garlic and Herb Seasoning that makes these SO addicting!
Air Fryer Zucchini Fries
INGREDIENTS
2 small zucchinis, trimmed and cut in half
1 tbsp seasoning of your choice (I like to use Garlic and Herb Seasoning, but you can use whatever seasoning you prefer.)
½ cup almond flour
½ cup tapioca starch or cornstarch
Oil for spritzing
Simple Aioli
⅓ cup mayonnaise
1 small garlic clove, pressed
¼ tsp smoked paprika
⅛ tsp salt
DIRECTIONS
Cut the zucchini using a knife. Toss the zucchini with the seasoning (Pampered Chef has AMAZING tasting Seasonings. You can get them here ) in a medium bowl and let stand for 5 minutes. Drain the liquid from the zucchini.
Combine the almond flour and tapioca starch in a shallow bowl. Working in batches, toss the zucchini in the flour mixture. Shake off the excess flour from the zucchini.
Spritz the Deluxe Air Fryer trays with oil, transfer the zucchini to the trays, and spritz the zucchini liberally with oil. Place the trays on the top and bottom racks. Cook on "AIR FRY" for 15 minutes, rotating the trays halfway through.
Meanwhile, combine the aioli ingredients in a small bowl. Serve the zucchini fries with the aioli.
